Here’s a recipe for soft and fluffy sponge dosa! Follow these steps:
1. Soaking:
Take 2 cups of raw rice, wash it thoroughly, and soak it for 4 hours.
Take ½ cup urad dal and 1 tsp fenugreek seeds, wash them, and soak them for 4 hours.
Take ½ cup aval (flattened rice), wash it, and soak it in ½ cup water.
2. Blending:
Blend the urad dal, fenugreek seeds, and soaked aval with ½ cup of water from the soaked rice, along with 2 ice cubes to keep the mixture cool. Pour this mixture into a bowl.
Blend the soaked rice next, starting with ½ cup of water from the rice and 3 ice cubes until it reaches a coarse consistency. Then add another ½ cup of water and blend to a fine, smooth consistency. Add this to the same bowl as the urad dal mixture.
3. Mixing the dough:
Mix the batter thoroughly using clean hands. The warmth from your hands helps the dough ferment.
Let the batter ferment for 8 hours or overnight.
4. Cooking:
After fermentation, gently stir the batter and add ¾ tsp of salt (or to taste). Adjust the consistency with a little water if needed.
Cook thick dosas on a hot griddle. Since these dosas do not need to be flipped, cover the pan with a lid while they cook.
