Ingredients (Serves 4)
Pork
• Pork tenderloin — 600–700 g
• Plain flour — 1 tbsp | 3 tsp | 8 g | scant ⅛ US cup | scant ⅛ UK cup
• Salt — 1 tsp | 5 g
• Black pepper — ½ tsp | 2 g
• Smoked paprika — 1 tsp | 2 g
• Vegetable oil — 1 tbsp | 3 tsp | 15 ml
• Butter — 1 tbsp | 3 tsp | 15 g
Bacon & Mushroom Gravy
• Smoked streaky bacon, chopped — 200 g
• Chestnut or button mushrooms, sliced — 300 g
• Onion, finely diced — 150 g (1 large)
• Garlic, minced — 3 cloves | 1 tbsp | 3 tsp | 15 g
• Chicken stock — 400 ml | 1⅔ US cups | 1⅔ UK cups
• Worcestershire sauce — 1 tbsp | 3 tsp | 15 ml
• Dijon mustard — 1 tsp | 5 ml
• Fresh thyme leaves — 1 tsp | 5 ml (or ½ tsp dried)
• Double cream (optional, just to round the gravy) — 2 tbsp | 6 tsp | 30 ml
• Chopped fresh parsley.
