Ingredients:
125g icing sugar
225g unsalted butter soft
225g plain flour
100g ground almonds
1 egg yolk
1 tsp vanilla
few tbsps spoons of strawberry or raspberry seedless jam
Step 1: Make The Dough
Add all ingredients for except the jam to a food processor and pulse until a ball of dough forms. Bring together with your hands, wrap in cling film and leave I fridge for 1 hour. Preheat oven to 190c.
Step 2: Make The Biscuits
Lightly flour your work surface. Once dough has chilled, take out and cut into 2 even halves. Roll the first half out until 3mm thick and start cutting your biscuits out using a cutter. Do the same with the next half of dough, cut the same amount of biscuits out as these will be the tops. In the middle of half your biscuits, using a small cutter or nozzle of an icing tube, cut a hole out of each biscuit.
Step 3: Cook The Biscuits
Lay all biscuits onto lined baking tray and pop into the oven to cook for 10 -- 12 mins, until golden. Take out and leave to cool on a wire rack.
Step 4: Assemble The Jammie Dodgers
Once cooled, place a large teaspoon of jam on top each biscuit that doesn't have the hole in, spread around a little as it's nice to see the jam at the edges of the biscuit, then place the biscuits with the hole on top.
