THE 20-MINUTE BAKED ZUCCHINI RECIPE
INGREDIENTS:
3 medium Zucchinis, sliced into half-inch rounds
2 Tbsp Vegetable Oil (divided)
1 tsp Dried Italian Herbs
1 tsp Sweet Paprika
3 cloves Garlic, minced
Salt and Pepper, to taste
2-3 Tomatoes, thinly sliced
3 oz (80g) Grated Cheese (optional)
Freshly chopped parsley (for garnish)
INSTRUCTIONS:
1. Preheat oven to 375°F (190°C).
2. Slice zucchini into half-inch rounds. Lightly brush both sides of the zucchini slices with about 1 tablespoon of the vegetable oil and arrange them on a parchment-lined baking sheet.
3. In a small bowl, mix the remaining vegetable oil (approx. 1 Tbsp) with the Italian herbs, sweet paprika, and minced garlic.
4. Brush the seasoned oil generously over the zucchini slices. Season with salt and pepper.
