Bread Rolls with Yogurt and Oatmeal Recipe

400g Flour (Type 550)
50g Rye Flour (Type 1150)
50g Oatmeal
1,5 tsp Salz
2 Tbsp Oliveöl
7g Dry Yeast
200ml Wasser
150g Yogurt
50ml Milch
PROCEDURE:
Mix all ingredients in a large bowl and knead until the dough becomes smooth (about 12-15 minutes)
Cover the finished dough (with a kitchen towel) and let it rest in the fridge for about 15 hours.
The next day, take the dough out of the fridge and form 90g of the dough into a small roll, cut the top in an X-shape, cover and leave to rest for approx. 1 hour. Preheat the oven to 200°C / 392°F top and bottom heat (approx. 15min).
Spray the dough pieces with water, put them in the oven and pour a cup of water on the hot oven floor and bake for about 20 minutes.
Then turn up the oven to 220°C and bake for another 5-10 minutes until golden braun. Enjoy!
