Very very popular gujarati farsan Idada which many people also call white dhokla is every gujarati's favorite dish. This White Idada can me made two ways. 1. Soaking Dal and Rice and 2.Using Flour Premix. Both way you will get the best result if you follow some basic rules and measurements for it.
To make White dhokla premix you need to wash and soak rice, urad daal (Split Black Gram) and Fenugreek Seeds for atleast 4-5 hours. Then drain all the water and then sun dry this dal and rice mixture for two days. After two days dry roast it for 2-3 minutes and then grind it to a coarse powder. Now you can store this powder in airtight container. Whenever you wants to make dhokla or idada from this flour soak it in buttermilk for 6-7 hours.
Another way making idada is Grinding wet dal and rice and make batter of it.
Ingredients:
3 Cups Rice
1 Cup Split Black Gram
1 tsp Fenugreek Seeds
3 tsp Flattened Rice
1 Ginger
2 tsp Green Chilly Paste
2 tsp Sesame Seeds
1 tsp Sugar
Salt to Taste
2 tbsp Oil
1 tsp Fruit Salt
2 tsp Water
For Tampering:
2 tsp Oil
1 tsp Mustard Seeds
1 tsp Sesame Seeds
2 Green Chilly
Fresh Coriander
