This high-protein carnivore-style bread made with cottage cheese, it is soft, sliceable, and made without flour, grains, or sugar.
This isn’t strict carnivore, but it’s 100% animal-based and perfect if you’re low-carb, keto-leaning, or looking for creative high-protein bread alternatives.
This is great for meal prep, sandwiches, toast, or burger buns.
🥚🧀 INGREDIENTS
12 Eggs
2 Cups Full-fat cottage cheese (4%)
2 Cups Pork rinds (pork panko)
2 tbsp Butter (or tallow/ghee)
1/2 tsp Salt (optional)
2 tbsp Apple cider vinegar (optional)
🥖 COOKING INSTRUCTIONS
Preheat oven to 350°F (175°C).
Place the oven rack on the middle rack for even baking.
Prepare the pan.
Line a 9×5-inch or 10×5-inch loaf pan with parchment paper, leaving overhang for easy removal.
Blend the cottage cheese until completely smooth.
This prevents wet pockets and gives a clean crumb.
Separate the eggs.
Place egg whites in a clean bowl and yolks in a large mixing bowl.
Whip the egg whites to stiff peaks using a mixer.
This step creates lift and keeps the bread from becoming dense.
Mix the yolk base.
To the egg yolks, add blended cottage cheese, melted butter (or tallow), salt, and apple cider vinegar.
Whisk until fully combined.
Add pork panko.
Stir in the crushed pork rinds until evenly incorporated.
Fold in egg whites.
Gently fold the whipped egg whites into the batter in 2–3 additions.
Use a light hand and stop once combined.
Transfer to pan.
Pour batter into the prepared loaf pan and smooth the top.
Bake.
Bake at 350°F for 55–65 minutes, until the center is set and the top is lightly golden.
If the top browns too quickly, loosely tent with foil after 40 minutes.
Cool properly.
Let the loaf cool in the pan for 15 minutes, then transfer to a wire rack and cool completely
(at least 45–60 minutes) before slicing.
Slice and serve.
For the cleanest slices, refrigerate the loaf for 30 minutes before cutting.
