is very tasty, and is quick and very easy to prepare.

Yield: 4 servings
Ingredients:
10.5 oz (300 g) tagliatelle or fettucine
1 small onion, diced
10.5 oz (300 g) cooked ham, diced into ½ inch pieces
5 oz (150 g) peas, fresh or frozen
8 fl oz (250 ml) double cream (heavy cream)
2 oz (50ml) white wine (optional)
3.5 oz (100 g) grated Parmesan cheese
1 tbsp olive oil
1/2 tbsp butter
1 sprig thyme
salt and pepper to taste
Instructions:
Bring a large pot of water to a boil, salt it generously, and cook the pasta according to the instructions on the package.
Reserve 250 ml (1 cup) pasta water before draining.
Meanwhile, melt the butter in a large pan and fry the onion for 1-2 minutes until it softens. Add the ham and cook for 2-3 minutes longer.
Next, add the peas to the pan and cook for 3-4 minutes or until tender
(option) If you are using fresh peas add them to
the cooking pasta in the last 5 minutes of cooking.)
Pour the double cream over the ham and peas mixture and continue to cook for 2-3 minutes until the sauce thickens. Stir in a bit of pasta water, then transfer the drained pasta (and peas if fresh peas wore used to the pan.
Toss it well to cover in sauce. Serve immediately with extra parmesan if desired.
