This cream of mushroom was inspired by an Aztec soup or Atolli…
Of course Aztecs didn’t have cream… they would just thicken it with a pinch of masa de nixtamal… corn tortilla dough…
I got this version from my Aunt Martha’s household in Mexico City…
Aztec Mushroom Soup
3 Tbsp Butter for Frying
1/2 Large Onion
1 lb (450 g) Shiitake, Crimini, Chanterelle and/or Porcini Mushrooms
Serrano Peppers to Taste
2 Tbsp Chopped Fresh Epazote
1 1/2 qt (1 1/2 L) Turkey Broth
1/4 Cup Cream
Salt to Taste
Fried Tortilla Strips for Decoration
Chopped Parsley for Decoration
