This Instant Pot MINESTRONE saves my week

Ingredients:
2 tbsp olive oil
1 large onion
5 carrots
2 sticks of celery
1 courgette/zucchini
300g curly kale
2 tins of tomatoes
800ml of veggie stock
80g dried pasta (small or smashed!)
1-2 parmesan rinds chopped (optional)
1 tbsp herbes de provence
1 jar of butter beans
1 tbsp cider vinegar
seasoning to taste
extra parmesan to top (optional)

Instant Pot: after sauteeing veg, cook on High Pressure for 4 Minutes, Quick Release

Adapting for stovetop:
The process for the soup is the same but the soup will need approximately a third more stock and will take a little longer to cook. Test your veg after 30 minutes and keep checking until cooked
