Puff-puff is a type of doughnut that is very common in traditional African home. Simply put, it’s a snack made of fried dough with ingredients including flour, yeast, eggs, milk etc. This is puff-puff recipe using Olyke Foods Oat Flour; oat gives it a distinctive and delicious taste that is second to none. INGREDIENTS
• 2 cups oat flour
• 1 tsp yeast
• 1/4 coconut sugar
• 2 tsp Psyllium husk
• 1/2 cup whole milk, warmed
• 1 egg
• 2 tsp coconut oil
• Oil for frying
Optional ingridients:
• 1/8 tsp nutmeg (optional)
• salt
DIRECTIONS
1. In the bowl, add all the dry ingredients and mix.
2. Add all wet ingredients.
3. IMPORTANT STEP: Mix on low for ONE MINUTE. Then turn off the mixer and let it rest for a minute. At this point, check the texture of the dough. If it is too wet to roll into balls, add a little more oat flour (estimate)... If it is too dry, add more milk. When satisfied with the dough texture, repeat the important steps 3 more times.
4. Grease bowl with oil and add dough, brush the top of the dough and cover with plastic wrap and a kitchen towel and let it rest for half an hour.
5. Roll the dough into balls, approx 20g each piece/your preferred size.
6. Fry the balls in hot oil.
