How to Make Baingan Da Bhartha
Step 1: Roast the Eggplant
Roast the eggplant directly over an open flame or in the oven until the skin is charred and the inside becomes soft and smoky. Let it cool, peel off the skin, and mash the pulp.
Step 2: Prepare the Masala
Heat oil in a pan. Add chopped onions and sauté until golden brown. Add garlic and green chili. Cook for 1–2 minutes.
Step 3: Add Tomatoes and Spices
Add tomatoes, turmeric, red chili powder, coriander powder, and salt. Cook until the oil separates and the mixture softens.
Step 4: Combine and Cook
Add the mashed eggplant and mix well. Cook for 5–7 minutes on low heat to blend the flavors.
Step 5: Garnish and Serve
Garnish with fresh coriander leaves and serve hot with roti, naan, or steamed rice.
