ONE POT DINNERS FOR BUSY MOMS || EASY MOM LIFE MEALS || Taylor Marie Motherhood
Hi friends! Today I am sharing some one pot dinners for busy moms! These are easy mom life meals that are perfect for busy days. I'm sharing a taco pasta, ham broccoli cheese shells and a delicious chorizo cajun rice. I have all the written recipes below. TACO PASTA:
Ingredients:
1 lb ground turkey/chicken
10oz can of diced tomatoes
2.5 cups stock
1 cup onion
1 cup peppers
1 tbsp taco seasoning
2 tbsp tomato paste
8oz short pasta
1 cup cheddar
1 tbsp olive oil
Directions:
In a large pot over medium heat add a 1 tbsp of olive oil. Add ground turkey and vegetables. Cook until meat is cooked through and vegetables have softened.
Once cooked add in taco seasoning and tomato paste. Stir then add in diced tomatoes and chicken stock. (Note: if using no salt added products make sure to taste for salt!)
Bring to a boil and add in pasta. Cook stirring often until pasta is cooked and most liquid is absorbed.
Turn off heat and stir in cheese. Mix until melted.
Optional: Top with tomatoes, green onion and sour cream.
Note: If using a different pasta you may need less or more chicken stock. If using smaller pasta start with 2 cups of chicken stock and add more as needed through the cooking process.
HAM BROCCOLI CHEESE SHELLS:
Ingredients:
8 oz broccoli
8 oz pasta
8 oz ham
1/2 cup onion
2 cloves garlic, minced
1.5 cups cheddar
1/2 cup milk
2.5 cups stock
1 tbsp olive oil
Directions:
In a large pot over medium heat add a 1 tbsp of olive oil. Add ham and onion and cook until onion softens. Add minced garlic and cook for another 30 seconds or so.
Add in chicken stock and milk. (Note: Bring milk to room temperature before adding to dish)
Bring to a boil and add pasta. Cook stirring often until pasta is about 5 minutes away from finished.
Add broccoli to pot, stir and cover for the last 5 minutes stirring once.
Turn off heat and remove lid. Stir in cheese until melted and combined.
CAJUN RICE:
Ingredients:
28oz toms
1/2 cup onion
1/2 cup celery
1 tbsp cajun seasoning
1/2 lb mild chorizo
1 cup stock
1 cup rinsed white rice
2 cloves garlic, minced
1 tbsp olive oil
Directions:
In a large pot over medium heat add a 1 tbsp of olive oil. Add chorizo sausage and vegetables. Cook until vegetables start to soften and sausage browns.
Add garlic and cajun seasoning. Stir for only about 10 seconds and add diced tomatoes and stock.
Bring to a boil and add rinsed rice. Stir and cover. Reduce heat to a simmer and cook for 10 minutes then stir making sure to scrape the bottom. Cover and cook for another 5-10 minutes or until rice is cooked.
Optional: Top with green onion, parsley or cilantro.
