🥚🌿 Gongura Egg Curry (Sorrel Leaves Egg Curry)
🧺 Ingredients:
Eggs – 4
Gongura (sorrel leaves) – 1 bunch (cleaned)
Oil – as required
Onion – 1 (sliced)
Green chillies – 2 to 3 (slit)
Curry leaves – few
Ginger garlic paste – 1 tbsp
Turmeric powder – 1/2 tsp
Red chilli powder – 1 to 1½ tsp (adjust to taste)
Coriander powder – 1 tsp
Garam masala powder – 1/2 tsp
Salt – to taste
Water – as required
👩🍳 Method:
1. Boil the eggs, peel them and keep aside.
2. Heat a pan, add cleaned gongura leaves, cover and cook until soft.
Switch off, cool slightly and grind into a smooth paste. Keep aside.
3. Heat oil in a kadai. Add turmeric powder and red chilli powder.
Add boiled eggs and fry well until lightly golden. Remove and keep aside.
4. In the same kadai, add a little oil if needed.
Add onions, green chillies and curry leaves. Sauté well.
5. Add salt and ginger garlic paste. Fry until onions turn golden brown.
6. Add the prepared gongura paste and mix well.
7. Add turmeric powder, red chilli powder, coriander powder and garam masala.
Mix well and cook for 2–3 minutes.
8. Add required water, cover and cook until the curry comes to a gravy consistency.
9. Add the fried eggs, mix gently and cook for another 5 minutes.
10. Switch off the flame and serve hot.
🍚 Serve Gongura Egg Curry with hot rice or chapati 😋
