Other Recipe Info:
The oxtail meat can take 2 hours or MORE to completely cook depending on the age of the animal, so check for tenderness throughout the process and cook as long as necessary. Add the bell peppers, carrots etc in the LAST 20- 30 minutes of cooking.
You may also put the whole pot in the oven to cook the oxtail instead of simmering on the stovetop.
This recipe can also be used for Stew Beef or Stew Pork adjusting cooking time if necessary
