In this time of the year, I always get green plums and make some preserving food and drink. It became my annual event.
I made baby ume plum syrup this year.

I LOVE LOVE ume syrup with soda. It makes me so recharged during the day time, especially in summer. I hope you can find ume plums and make syrup at home, but it might be hard for you to find it. Don't worry. You can substitute with other fruits you like!
RECIPE
35oz (1kg) ume plums
*You can substitute with fruits you like. Any citrus, kiwi, berries, etc...
35oz (1kg) rock sugar
6.76floz (200cc) apple cider vinegar
It’s a 1:1 ratio of ume to rock sugar.
Prepare the plum as this video shows. Make layer with plums and rock sugar in a sterilized container. It takes at least a month to mature. You need to shake the container once in a few days for 2 weeks, then leave it for 2 weeks more.but you can start drinking 2 weeks after making. It is better to remove ume plum, then store it in refrigerator. You can eat ume afterwards, but it taste a bit less.
You can preserve it for a year. I recommend to mix with soda, cold water, and milk. You can also enjoy mixing with hot water in winter.
By the way, I used the ripe ume for "ume vinegar". 1:1:0.5 ratio of ume : apple cider vinegar : rock sugar! Hope you can try it!
