Popiah or fresh spring rolls are made from 4 main components.
COMPONENT 1- The Popiah Skin
The skin is paper thin and made from flour, salt and water.
COMPONENT 2 - The Popiah Fillings
The filling can be made from bangkuang/jicama, carrots, green peas, french beans, long beans, taugeh/bean sprouts etc
COMPONENT 3 - The Popiah Toppings
The toppings can be crushed peanuts, fried garlic, mashed hard boiled eggs, lettuce leaves, poached prawns, fried firm tofu, etc.
COMPONENT 4 - The Popiah Sauces
The sauces can be sweet black sauce, sambal/chilli paste, etc.
INGREDIENTS
Popiah Skin
4 cups plain flour
1 tsp salt
4 cups plain water
Popiah Fillings
1 kg bangkuang/jicama
2 carrots
2 cups green peas
10 cloves garlic
5 bulbs small onions
1/4 cup salted prawns
1/2 Tbsp salted soya bean paste
2 Tbsp oyster sauce
Popiah Toppings
1 cup crushed peanuts
1/2 cup fried minced garlic
1 cup poached prawns
1/2 cup lap cheong / Chinese sausage
2 pieces (450g) firm tofu
6 hard boiled eggs
10 pieces of lettuce leaves
Popiah Sauces
5 Tbsp sweet black sauce
2 Tbsp sambal/ chilli paste
