Now I don't wanna say either one is better, it's mostly personal preference, and there is more to these games than just combat altough Nioh has a much bigger focus on active combat.
But I found the contrast pretty interesting, Dark Souls encourages a more defensive approach with a Stamina Bar and more committed moves that you can't simply dodge out of.
Nioh takes those mechanics somewhat but restructeres them to encourage aggression more, so the Stamina Bar for example can be managed via active coombat (Flux´, Yokai Abilities, etc.) .
Mastering that lets you be able to keep up your aggression for a loooong time which makes Nioh's combat so satisfying.
