Try this method of baking a sponge to get a perfect not dry sponge. A perfect combination of flavour with a sweet raspberry filling and a tangy lemon sponge.
Recipe Ingredients:
Raspberry filling:
Frozen Raspberry: 400g
Granulated sugar: 1 cup
Lemon Juice: 1 tbsp
Water: 3 tbsp
Corn starch: 3 tbsp
Lemon Sponge:
Large Eggs: 6
Cake flour: 135g
Granulated Sugar: 75g plus 75g
Oil: 50ml
Lemon juice: 80ml
Lemon Zest: of 2 lemons
Vanilla extract: 1 tsp
Lemon extract: 1/4th tsp (optional)
Sugar Syrup:
Sugar syrup - 1/2 cup
Water - 1/2 cup
lemon zest - 1 tsp
lemon juice - 1 tbsp
Mascarpone Whipped Cream:
Mascarpone Cheese - 1 cup
Whipping cream - 2 cups
Icing sugar - 1 cup
Vanilla extract - 2 tsp
Lemon Zest - of 1 lemon (optional)
