Tempering
-----------------------
Ghee - 2 tsp ( heaped )
Oil - 1 tsp
Cinnamon - 1 small piece
Star anise - 1
Cardamom - 3
Cloves - 2
Fennel seeds - 1/8tsp
Crushed ginger - 1/4 tsp
Ingredients fried in oil till light brown

Sliced onion - a handful
Carrot cut into semi thick strips - a handful
Raisins - 1 tsp
Cashew nuts - 8
( Heat 4 tsp of oil and fry onions with a pinch of salt till golden brown and keep it aside.In the same oil fry carrots till its light brown,remove.Fry the raisins till they bloat and cashews nuts till light brown.Later we will be mixing it into the cooked ghee rice and some for garnish )
Other ingredients

Jeeragasamba rice /Wayanadan Kaima rice 1/2 cup
( wash and soak rice in some water for 10 minutes)
Water - 1 cup
Sliced onion - 2 tsp
Salt to taste
Method
--------------
Heat ghee and oil in a pan add the spices and ginger fry till nice aroma comes.
Now add sliced onion and give a quick stir.
Pour water when it starts to boil reduce flame and add just the soaked rice( discard the water from the soaked rice) and salt ,mix well.
Cover and cook it in low flame till rice is perfectly cooked and grains are separate.
Switch off the stove add the fried carrot,onion,raisins and cashew nuts,gently give a mix.
Best served with spicy mutton or chicken curry.
