The double sulphitation process is a method for refining sugarcane juice to produce white sugar, which involves adding sulfur dioxide (\(SO_{2}\)) twice to the juice to purify it and give the final product a white color. It's a traditional Indian refining technique that uses sulfur dioxide as a bleaching agent and to remove impurities through a process that includes a first sulphitation of the juice and a second one of the concentrated syrup
How it works Initial sulphitation: Raw cane juice is heated and mixed with lime and sulfur dioxide.Sulfur dioxide reacts with the lime to form calcium sulfite (\(CaSO_{3}\)), a precipitate that helps trap and remove impurities and colloidal matter from the juice.The initial \(SO_{2}\) treatment also neutralizes the acidity of the juice.Clarification: The mixture is then clarified, separating the muddy precipitate from the clear, clean juice.Evaporation: The clear juice is concentrated into a thick syrup in a series of evaporators.Syrup sulphitation: The syrup is then treated a second time with more sulfur dioxide.This second dose acts as a bleaching agent, further purifies the syrup, and helps decolorize the sugar to give it a white color.Crystallization: The treated syrup is sent to vacuum pans for crystallization, followed by centrifugation to separate the sugar crystals from the molasses, and finally drying and packing.
