Ingredients
For Kofta Cover:
Minced chicken / mutton – 500 g (chicken is lighter, mutton is more royal)
Boiled eggs – 5–6 (whole, peeled)
Onion – 1 medium, very finely chopped
Ginger-garlic paste – 1 tbsp
Green chilli paste – 1 tsp
Coriander leaves – 2 tbsp, finely chopped
Mint leaves – 1 tbsp, finely chopped
Roasted besan – 2 tbsp
Garam masala – 1 tsp
Coriander powder – 1½ tsp
Red chilli powder – 1 tsp
Black pepper – ½ tsp
Salt – to taste
Lemon juice – 1 tsp
Oil – for deep frying
Cashew 7-8, 1 tsp sesame seeds or khush khus and 1 tsp desiccated coconut – powdered (half half used in both gravy & kofta)
For Gravy:
Onions – 3 medium, finely chopped
Tomatoes – 3 medium, pureed or finely chopped (de-seeded)
Ginger-garlic paste – 1½ tbsp
Cumin seeds – 1 tsp
Bay leaf – 1
Green cardamom – 3
Cloves – 3
Cinnamon – 1 small stick
Kashmiri red chilli powder – 1½ tsp
Turmeric – ½ tsp
Coriander powder – 2 tsp
Garam masala – 1 tsp
Fresh cream – 2 tbsp
Kewra / rose water – ½ tsp (very authentic touch)
Oil + ghee – 3 tbsp total
Fresh coriander – for garnish
