Afghan food is one of the most underrated cuisines in the world, and today my friend Bilal Kamal is taking me to eat some of the best of it in Kabul, Afghanistan. The main event is Kabuli Pulao — mountain-sized rice cooked with tender lamb, sweet carrots, and raisins — and at Abid Pulao Restaurant we see the entire process from start to finish before digging in. Then we try an original Afghan fast food: the Afghan burger at Osman Burger, a flatbread stuffed with fries, salad, and chutney. We cool down with Sheer Yakh at Ghazna Ice Cream — Afghan ice cream hand-churned for 2 hours — and finish with what I'd been waiting for all day: sizzling bone-in chopan lamb kebabs at a Turkmen restaurant!
