Nothing better than a cheesy, hearty soup for the cold winter months.
Broccoli Cheddar Soup
•3 T butter
•4 cloves garlic, minced
•1 yellow onion, diced
•3 T flour (or flour of choice)
•4-5 c chicken broth
•2 large russet potatoes, peeled & cubed
•1 tsp Salt
•1 tsp Pepper
•6 c broccoli florets, cut into bite sized pieces
•2 large carrots, shredded
•1/2 tsp dried thyme
•1/4 tsp dried sage
•1 c whole milk
•1/2 c heavy cream or half & half
•8 ounces shredded cheddar cheese
•Prep the broccoli, carrots & onion ahead and then heat a dutch oven over medium heat.
•Add butter & onion and cook for 3-4 minutes until translucent. Add in garlic and cook for another minute or so until fragrant.
•Stir in flour and cook for another 2-3 minutes then slowly stir in broth until combined.
•Add potatoes and make sure there’s enough broth to cover the potatoes. Add more broth as needed.
•Season well with salt and pepper and bring to a boil, then cover and reduce to a simmer for 20 minutes.
•Use an immersion blender to blend into a creamy soup or you can blend in batches in a regular blender.
•Stir in milk, cream, thyme, sage, & cheddar cheese and stir well to combine.
•Carefully add in broccoli & carrots. Bring to a boil again, then reduce to a simmer for 15 minutes or until broccoli is tender. Taste and adjust seasonings as needed.
•Top with cheese & sour cream. We enjoy dipping it with a crusty sourdough bread.
