Recipe -
Ingredients:
1. Papad - 2 no
2. Clarified butter/Ghee - 3 teaspoon
3. Asafoetida powder/Hing powder - a pinch
4. Cumin seeds/Jeera - 1 teaspoon
5. Ginger/Adrak - 1/2 inch grated
6. Green chili/Hari mirch - 2 no slit
7. Curry leaves - a few
8. Red chili powder/Lal mirch powder - to taste
9. Turmeric powder/Haldi powder - 1/2 teaspoon
10. Coriander seeds powder/Dhania powder - 1 teaspoon
11. Fresh Curd/Dahi - 1 cup (whisked)
12. Salt - to taste
13. Dry fenugreek leaves/Kasuri methi - to taste
14. All spice mix powder/Garam masala - 1/2 teaspoon
15. Coriander leaves - to garnish
Instructions:
1. Take the papad and make small pieces of it. Roast them in a pan on medium to low flame for 2 to 3 minutes. Keep stirring in between.
2. Heat ghee, put the asafoetida powder, cumin seeds, grated ginger, green chilies, and curry leaves. Mix well.
3. Then, put the red chili powder, turmeric powder, and coriander seeds powder. Mix well. Keep the flame low and add the curd. Mix continuously.
4. Once the curd starts to boil, then switch the flame from low to high. Put the salt to taste, rub the dry fenugreek leaves and then add.
5. Then, put the all spice mix powder and mix. Put the roasted papad pieces and mix well. Garnish with the coriander leaves.
6. The Papad Ki Sabji is ready to be served.
