Cauliflower Gnocchi Recipe
Ingredients:
1 package frozen Cauliflower Gnocchi from Trader Joe's
3 chicken thighs, cut into bite-size pieces
1 Jar Trader Joe's Pumpkin Bisque Soup
2 Smoked Apple Chardonnay Chicken Sausages, sliced into coins
2 carrots, grated
1 cup of asparagus, cut into 1 inch pieces
Handful of basil, chiffonade ( chopped)
1 Tbsp. fresh lemon juice
Fresh parmesan cheese, to grate over the finished dish
Chopped parsley for garnish
1 Tbsp or more butter
2 cloves garlic, minced
Salt
Avocado oil
Directions:
Preheat 2 pans over medium high heat. When hot add 1 Tbsp. of oil to each pan and swirl. Add chicken to one pan, add some salt and stir as it cooks.
To the other pan, add the butter and when it melts add the frozen gnocchi and spread it out in a single layer in the pan. Let the gnocchi sit in the pan without stirring. The goal is to let it brown and crisp up. After about 4 minutes turn them over to brown on the second side.
When the chicken looks likes it's close to being done add the carrots and asparagus. Let this cook stirring frequently for a few minutes and then add the garlic and cook 1 minute more. Sprinkle the parsley over the top and then turn off the heat.
Keep turning over the gnocchi until all sides have browned up. Then add the sausage to heat up as it is already cooked.
Pour the chicken ingredients into the gnocchi pan and stir to combine. Add about ½ cup or more of the pumpkin bisque and stir. Squeeze lemon juice over the top and stir one last time.
Garnish with grated parmesan cheese and chopped parsley.
