• Milk rice with sour cherry jelly
Ingredients
For the rice pudding:
A pinch of salt
300 g rice
1.8 liters milk
40 g vanilla sugar
20 g sugar
50 ml heavy cream
70 ml pitted sour cherries (from compote)
For the cherry jelly:
30 g gelatin powder
150 ml water
350 ml sour cherry compote juice
Instructions
1. Cook the rice pudding
In a pot, combine the rice, salt, milk, vanilla sugar, and sugar.
Cook over medium heat, stirring often, until it becomes thick and creamy.
Remove from the heat and let it cool for 15 minutes.
2. Prepare the cherry jelly
Mix the gelatin powder with 150 ml water and let it bloom for 5 minutes.
Gently heat the mixture until the gelatin dissolves — do not boil.
Warm the 350 ml cherry juice and stir in the dissolved gelatin.
Refrigerate until fully set and firm.
3. Finish the rice pudding
Stir the 50 ml heavy cream into the slightly warm rice pudding.
Let it cool for another 25 minutes.
Add the pitted sour cherries.
Fill your serving glasses about 2/3 full.
4. Add the jelly cubes
Cut the set jelly into 1×1×1 cm cubes.
Spoon or scatter them over the top of the rice pudding.
