Shrimp fajitas, for 2
1 lb shrimp, raw
1 poblano pepper, sliced
1 red pepper, sliced
½ white onion, sliced
1 clove garlic, minced
1/2 tsp smoked paprika (or reg paprika)
¼ tsp cayenne pepper
¼ tsp cumin
¼ tsp onion salt
½ tsp garlic powder
Splash of tamari (or soy sauce)
1 lime, juiced
1 tablespoon butter
1 tablespoon avocado oil
Heat a cast iron skillet on medium heat. Add avocado oil once hot, and then add onions, peppers, and the spices (don’t add the lime, tamari, or butter yet). Stir frequently until almost cooked ~5-7 mins. Add the garlic after the peppers and onions look almost done (adding late so it doesn't burn!).
Turn up heat to medium-high (add a little bit more avocado oil if the pan is dry), add the splash of tamari and the shrimp. Stir frequently and cook about 3 mins or until shrimp are cooked through and pink!
Add the butter, and lime juice once shrimp are cooked.
Serve with guacamole, and whatever toppings you enjoy. Tortillas optional – leave out if you want to keep this meal very low carb.
