Recipe:
1 package (340g) brown rice spaghetti
3/4 cup almond butter, smooth or crunchy
2/3 cup gluten free soy sauce
Juice of 2 limes (or 1/2 cup lime juice)
2 Tablespoons fresh grated ginger
2 Tablespoons canola oil
4 cups chopped broccoli florets
1 cup water
Cook noodles according to package and then rinse, rinse, rinse!
In a small bowl whisk together almond butter, soy sauce, lime juice and ginger. Set aside.
Bring wok over medium/high heat. Add canola. Once oil has heated up, add broccoli and stir. Add water, then cover to steam broccoli until tender, but not mushy (about 6 mins).
Add noodles and sauce, tossing until coated. (Add a bit of the pasta water to thin out sauce if necessary).
Can be served warm or cold.
