INGREDIENTS
8 oz to 10 oz ( 227 g to 283 g ) store-bought chorizo
2 medium potatoes (diced)
pinch of salt
1/4 cup (60 ml) water
20 to 22 corn tortillas
3 to 4 oz (85 to 113 g) shredded cheese of choice
3 Tbsp cornstarch (for cornstarch paste)
2 to 2 1/2 Tbsp water (for cornstarch paste)
cooking oil for frying
Toppings and garnishes of choice
