Pasteis de Nata, also known as Portuguese egg tarts is here! But I’m cheating with #lazyjxcooks method, so using prata sheets for the tart shells instead😉 you can also use puff pastry as a substitute.
Really amazing how prata sheets can still create the flaky crust that we want!
- - R E C I P E - - -
(Makes 5)
2.5 prata sheets
60 g whipping cream (35% fat content)
1 yolk
1 tbsp corn flour
30g sugar
110g milk
1/4 tsp vanilla extract

1. Remove prata from the freezer a minute before using them. You can choose to “loosen” the plastic sheet first so they don’t stick to it.
2. If you are working at a slower pace, place the prata sheets you are using in the fridge (the rest that are not used should be placed back in the freezer) while you work on moulding one tart at a time. Then take one sheet out when you are ready to use.
3. Press out any air bubbles in the prata sheets if not your baked tart would be hole-y.
4. Sieve your custard to give it a smooth texture.
5. Store refrigerated (no need for cling wrap, just a container is fine) and heat up at 200 degree celsius for 10 minutes.
