Ingredients:
For the Cobbler Base:
½ cup (1 stick) unsalted butter, melted
1 cup all-purpose flour
1 cup granulated sugar
1 tablespoon baking powder
½ teaspoon salt
1 cup milk (whole or 2%)
1 teaspoon vanilla extract
For the Banana Filling:
4-5 ripe bananas, sliced into rounds
½ cup light brown sugar, packed
1 teaspoon ground cinnamon
¼ teaspoon nutmeg
For Serving:
Whipped cream or Vanilla Ice Cream
Fresh banana slices
Powdered sugar (for dusting)
Instructions:
Prep: Preheat oven to 375°F (190°C).
Melt Butter: Put the stick of butter in a 9x13 inch baking dish and place it in the oven for a few minutes until fully melted. Remove from oven.
Make Batter: In a medium bowl, whisk together the flour, granulated sugar, baking powder, and salt. Stir in the milk and vanilla extract until just combined (a few lumps are okay).
Pour: Pour the batter directly over the melted butter in the baking dish. Do not stir. The butter and batter will separate, which creates the crust.
Add Fruit: Arrange the sliced bananas evenly over the batter. Do not stir.
Season: Sprinkle the brown sugar, cinnamon, and nutmeg evenly over the top of the bananas.
Bake: Bake for 40-45 minutes, or until the batter puffs up and turns golden brown, and the edges are crispy. The fruit will sink to the bottom and the batter will rise to the top.
Cool: Let it stand for 10-15 minutes before serving to allow the sauce to thicken slightly.
Serve: Scoop warm cobbler onto plates. Top with fresh banana slices, a dollop of whipped cream, and a dusting of powdered sugar.
