• 7 oz (200 g) shrimp, peeled
• 7 oz (200 g) rice vermicelli
• 1 bok choy
• 1 chayote
• 5 oz (150 g) shiitake mushrooms
• 5 oz (150 g) green beans
• bell pepper (any color)
• Sesame seeds
Sause:
• 5 tbsp soy sauce
• 1 tbsp oyster sauce
• 1 tbsp honey
• 1 tbsp sesame oil
• 1 tbsp dried garlic
• 1 tsp ground ginger
• Freshly squeezed lemon juice, 1 tbsp
• Chili flakes to taste
👩🍳 Preparation
1️⃣ Prep
• Soak the rice vermicelli in hot water for 5–7 minutes.
• Slice the chayote into thin matchsticks.
• Separate bok choy stems from leaves.
• Slice shiitake mushrooms (remove the tough stems).
• Trim and halve the green beans.
• Slice the bell pepper into strips.

2️⃣ Stir-Fry
1. Heat a wok or large skillet over high heat with oil.
2. Cook the shrimp for 1.5–2 minutes until pink, then remove from the pan.
3. In the same pan, add garlic for 30 seconds.
4. Add mushrooms, green beans, bok choy stems, chayote, and bell pepper — stir-fry for 3–4 minutes.
5. Return the shrimp, add the noodles and sauce, and toss everything together.
6. Add the bok choy leaves, stir-fry for 1 more minute.
7. Sprinkle with sesame seeds on top.
