I'm Henry, a chef, ex-humanitarian aid worker, ex-corporate sell out, and native New Yorker. I’m on a mission to discover and cook food that is wild and alive. So, I started at home and traced NYC's food ecosystem back to its roots. I mapped NYC’s most famous ingredient, fished Jamaica Bay with Captain Pat, learned secret fish sauce recipes at Hamido Seafood in Astoria, and fire-cooked a meal on the East River that tells the story of this place. This is the hidden and wild side of NYC food.
This is Episode 1 of Here & There with Chef Henry Elliman.

Each episode, I travel somewhere new to prepare a fire-cooked meal where every element—the ingredients, the setting, the table itself—is inspired by the landscapes and the people I learn from along the way. It is an adventure, sometimes risky, and always driven by my obsession for the flavors that remind us that food is wild and alive.
