Chicken
2 lbs boneless, skinless chicken thighs
2-3 chipotle peppers in adobo sauce
3 garlic cloves, crushed
1 tsp oregano
1 tsp cumin
Juice of 1 lime
2 tsp salt
1/2 tsp black pepper
1/4 cup neutral oil
Blend all ingredients until smooth & add it to the chicken. Marinate for at least 30 minutes.
Mild Salsa
5-6 plum tomatoes, deseeded and diced
1/4 red onion, diced
3 tosp cilantro, chopped
2 tbsp jalapeño, diced Juice from 1/2 lime
Salt & pepper to taste
Corn Salsa
1 cup frozen white corn
1/4 red onion, diced
3 tbsp cilantro, chopped
1/4 jalapeño, diced
1/2 roasted poblano pepper, diced
Salt & pepper to taste
Chipotle Crema
2 chipotle peppers in adobo sauce
1/2 cup mayo 2 tbsp sour cream
1 tsp garlic powder
1/2 tsp paprika
Juice of 1 lime
1 tbsp honey or maple syrup
Salt & pepper to taste
8 oz pasta of choice
8 oz Monterrey jack cheese
