Today's Recipe : Vegetarian Muri Ghonto | Niramish Muri Ghonto | Vegetarian Cauliflower Recipe | NO ONION NO GARLIC RECIPE
Traditionally Muri Ghonto is a very popular and famous fish head curry cooked in gobindobhog rice and aromatic spices like cardamom, cinnamon and cloves with cow ghee. In this recipe, we have prepared the vegetarian version of it with cauliflower and potato. Originally this is a no onion no garlic recipe even though cooked with fish head.
Recipe :
Ingredients :
Cauliflower - 1 medium size
Potato - 250gms
Tomato - 1 large
Gobindobhog rice - 1/3rd cup (You can also use ambemohar rice)
Cardamom - 2 - 3
Cinnamon - 1 - 2 sticks
cloves - 4 - 5
bay leaf - 2 - 3
Cow ghee - 1 tbsp
mustard oil - 60 ml
Salt to taste
Turmeric powder
Sugar -1 tsp
Wash the gobindobhog rice and keep it soaked in water for 30 mins
For the masala paste :
Make a paste of below spices in a mixer jar by adding 30ml to 40 ml water
Cumin seeds - 1 tsp
Coriander Seeds - 1tsp
Ginger - 2 inches chopped
Green chilles - 2 to 3 chopped
Red chilli - 1 to 2 as per taste
Take out the paste in a bowl and add turmeric powder,salt,sugar and chopped tomato. Mix well and keep it aside.
Procedure :
Steam cauliflower and potato so that its 50% cooked.
Heat a kadai or wok. Add sufficient mustard oil.When the oil is hot add a pinch of turmeric powder & fry cauliflower florets and potato cubes.
Add some more oil to the same kadai. Add bay leaves, whole garam masala and cumin seeds. When the cumin seeds starts splutter add the masala paste. Fry it till oil starts showing on the surface.
At this point add the soaked gobindobhog rice and fry for 10 mins.
Now add the fried cauliflower and potato and stir well.
Coat the vegetables properly with the spices and fry for 5 mins.
Add 500 ml boiling water. Cover and cook on low flame for 15 mins.
Remove the lid in between to check & adjust the salt and water.
When the vegetables and rice are cooked,add 1 tablespoon of cow ghee.Switch off the flame & keep it covered for 5 mins.
Serve it hot with vegetable pulao or roti or puri / luchi.
