MEAL PREP FOR 9.8.19
BREAKFAST FRITTATA - Makes 6 servings, 3 FSP per serving
12 eggs
1/4 cup fat-free half and half
12 slices Appleton Farms center cut bacon
1/2 cup Sargento reduced-fat cheese
Mushrooms (you can use whatever vegetables you'd like)
Green onion to garnish.
Cook bacon and mushrooms
Mix eggs and half and half. Add bacon and mushrooms to egg mixture.
Spray pie dish with olive oil spray
Add egg mixture and bake at 400 degrees for about 15 to 20 minutes (ovens vary)
Top with cheese and green onion. Slice into 6 pieces.

CHICKEN FRIED RICE - Makes 4 servings, 3 FSP per serving
1-1/4 lb chicken breast, cut into bite-size pieces, seasoned with chicken seasoning
2 cups cooked rice (cooked and cooled)
3 eggs
1-2 cups frozen vegetables of choice (I used mixed, but peas and carrots work great)
Onion or shallot
Bell pepper, optional
3 Tbsp soy sauce
Dash of sesame seed oil
Spray a wok or pan with olive oil spray. Cook chicken until cooked through. Set chicken on a plate. Add all vegetables to pan. Saute until no longer firm. Add eggs. Create a small area to cook the eggs. When eggs are cooked, mix them together with the vegetables. Add rice and chicken. Add in soy sauce and sesame seed oil. Mix well. Split evenly amongst four prep dishes.

BASIL-PARMESAN SALMON - 2 FSP per serving, makes 4 servings

My Modifications: I used Hellman's light mayo, which brought the points down from 3 FSP/serving to 2 FSP/serving.

My portion in the Cook with Me was actually a third, so I counted it as three. Mine took 7 minutes to cook. I also opted for no rice when I sat down to eat! :)

MOZZARELLA-STUFFED PORK CHOPS - 7 FSP/serving; makes 2 servings
(2) 4-oz center cut boneless pork chops
1 oz Polly-O part-skim mozzarella (divided into two)
1 tsp breadcrumbs
Cut pockets in pork chops, add 1/2 oz mozzarella in each. Close with toothpicks.
Sprinkle bread crumbs over top
Air fry at 400 for approximately 12 minutes.

RANCH CAULIFLOWER - 2 FSP/serving; makes 2 servings
Line tray with aluminum foil; spray with olive oil spray
Break cauliflower into bite-size pieces and roast in 450-degree oven for about 20 minutes
Combine 2 oz light sour cream with 1 tsp Hidden Valley ranch powder
Spoon mixture over cooked cauliflower

ROASTED TURKEY TENDERLOIN - 0 FSP/SERVING; makes 2 servings
12 oz turkey breast tenderloin
Stone ground mustard
Spray aluminum-lined tray with olive oil spray.
Brush stone ground mustard on turkey breast, season with seasonings of choice
Roast in 425-degree oven for 25 to 30 minutes, depending on size of your tenderloin.
Let rest 5 minutes.
