Victoria Sponge Cake
Ingredients:
For the Cake:
4 tbsp unsalted butter, softened
¼ cup + 2 tbsp granulated sugar
2 eggs
1 tbsp milk
½ tsp vanilla extract
¾ cup gluten-free flour
½ tsp baking powder
⅛ tsp baking soda
Pinch of salt
Jam, for filling (I used mixed berry)
For the Cream:
¼ cup heavy cream
1 tbsp granulated sugar
¼ tsp vanilla extract
Directions:
For the Cake: preheat the oven to 350 F
In a large bowl (or using an electric mixer), whisk together the butter and sugar
Add in one egg and whisk until lighter in color and foamy
Add in the second egg, the milk, and vanilla extract, and mix until fully combined and foamy
Sift in the flour, baking powder, baking soda, and salt, then mix to form a batter
Prepare two 4-inch cake pans by greasing them with butter, then coating the interior in flour
Pour the mixture evenly into the cake pans, making sure to fill only ¾ of the way up
Bake for 25-30 minutes
For the Cream: With a hand mixer, combine the heavy cream, sugar, and vanilla extract
To assemble: cut the tops off the cakes so that they are flat, then cake, jam, cream, cake
