In the 3rd episode of our 5 parts Amritsar Food Tour we are eating our way through the old part of the city. This gastronomic sojourn with our host Deepak Kumar covers some regular crowd favourite Amritsari food from a handful of popular vendors and non fancy eateries that have been feeding the locals for generations. It is definitely going to be a nostalgic experience for many of us.

Our first stop was Giani Tea Stall where locals flock for their strong masala chai and snacks. It is also one of the favourite hang out places for morning walkers. During our visit we came across one such genial group who were enjoying tea with omelette, bun, samosa etc. What followed was an amusing time full of laughter and exchange of stories. Giani's cardamom tea is quite interesting as it is not just flavoured but also garnished with a good amount of crushed cardamom. You first need to sip it and then chew the crushed cardamom. Our new friends over there made us try some Nankhatai which was from Lahore. Those whole nut encrusted buttery cookies were quite delicious.

The second stop of this tour was Green Bakery which is one of the handful of bakeries that still uses a wood fired oven for baking. Their popular bakery items are sweet buns, patties, rusk and cream roll. One is welcomed by the appetizing smell of freshly baked items as the workshop is attached with the bakery. Since a fresh batch of sweet bun was being prepared, we decided to try it. Watching the old style bread making was quite fun. When the batch was ready, the owner sliced up a tutti frutti encrusted hot bun, slathered it with butter and jam and served us. It was warm, hearty and luscious. Locals love it for breakfast.

The third stop was Mehar Do Hatti, which is an old and small dhaba style eatery famous for their sweets and snacks. After witnessing the making of two quintessential Amritsari snacks, satpura and katlama, in their kitchen, we settled down to taste it. Satpura was served with aalu ki launji and chutney while katlama with chole, chutney and some gur ka halwa. The former was like a puff pastry with thick and crisp layers while the later was a deep fried flatbread with crisp flaky layers. The spicy potato filling inside the satpura added to its crispy deliciousness. We finished with some chocolate which was a khoya based sweet that looked like a caramel toffee.

The fourth stop was the Swaroop Khajoor Shop that we visited for the winter special fried sweet by the same name. They are crisp and soft sweet snacks made of maida. They are either fried in ghee or dalda and are available only during the peak winter months. The tricky part is the frying part which takes place slowly.

The fifth stop was Dipi Bhature Wala. The neatly maintained cart serves ready-made bhature with chole. When one orders a plate they reheat the bhature on a griddle and serve. Here you can opt for the plain one or the potato stuffed bhature. One can also get fried paneer pieces added to their chole. The pillowy soft perfectly seasoned bhature and the mildly spiced chole made for an absolutely irresistible combo. It was one of the main highlights of our Amritsar food tour.

The sixth stop was Badal Milk Bhandar where we went for having hot milk but ended up trying just the thick layer of cream floating on the slowly simmering milk.

The final stop of this food tour was Gurdasram Jalebiwala.
