Learn how to make Sandakan UFO tarts with my easy recipe. Originating from the Malaysian city of Sandakan in Borneo, UFO tarts are made with a flat sponge cake base, a custard centre and a lightly-toasted meringue covering for the custard. These sandakan tarts are also sometimes called cow pat tarts, or cow dung pile tarts, when the meringue's piped in a peaked swirl around the custard instead of in a spiral with an open middle.
