Prep Time: 20 minutes
Makes: 8 servings
Salad Ingredients
8 cups torn romaine lettuce
2 plum tomatoes, sliced
1 cup pitted ripe olives
1 cup Caesar salad croutons
½ medium red onion, cut into rings
½ cup shredded Parmesan cheese
1 small carrot, shredded
8–10 pepperoncini peppers
Dressing Ingredients
⅔ cup olive oil
2 Tbsp water
3 Tbsp white vinegar
2 Tbsp mayonnaise
1 envelope Zesty Italian salad dressing mix
2 tsp Dijon mustard
½ tsp sugar
½ tsp garlic powder
½ tsp salt
⅛ tsp cracked black pepper
Instructions
In a salad bowl, whisk together the first 8 dressing ingredients until smooth.
Add the remaining dressing ingredients and whisk well.
Add salad ingredients to a large bowl.
Pour dressing over salad and toss to coat evenly.
If desired, top with extra shredded Parmesan and cracked black pepper.
Serve immediately.
