I am super crazy for wild tomatillos, also known as ground cherries (genus Physalis); they may be the wild food I like most in the world!
For the longest time I was deterred from eating those that were not fully ripe by warnings in the wild food literature. But it doesn’t make much sense because store-bought tomatillos are consumed green.
Since then I have eaten large quantities of l longleaf groundcherries (P. longifolia) many times in their green, slightly underripe state. They taste tangy, slightly sweet, and yummy like store-bought tomatillos.
I can find no scientific evidence that underripe tomatillos are toxic—though it may be true that some other species are acrid/toxic when underripe (or ripe), for I have certainly not tried them all.
My rule of thumb is that if they taste good green (or fully ripe), and they don’t burn the mouth, then they are edible. This is helpful because you can beat the bugs to the tomatillos if you pick them slightly underripe.
