Using a centuries-old technique, a whole lamb is seasoned with traditional spices and slowly cooked underground — buried deep in a stone pit filled with glowing coals — for hours, until the meat is perfectly tender and falling apart.
While the lamb cooks beneath the earth, giant rounds of flatbread are baked in a clay tandoor and a massive pot of spiced tomato rice simmers over an open fire — all prepared by hand, with no modern tools, in the heart of winter.
