Ingredients -

2 - Medium to Large Eggplants (Aubergines), Diced
1 1/2 Tbsp (30ml) - Olive Oil
Seasoning To Taste

1 1/2 Tbsp (30ml) - Olive Oil
3 - Garlic Cloves, Minced
1 Can (400g) - Diced Tomatoes
1 1/2 tsp (1.5g) - Dried Oregano
1 tsp (1g) - Dried Chilli Flakes (Optional)
20g (0.7oz) - Basil Leaves & Stems (Stems Used For Sauce)
450g (15.8oz) - Pasta Of Choice (I Used Penne)
Seasoning To Taste

Recipe Notes -

If the sauce reduces too much and becomes really thick, add 1/2 a cup (125ml) of water from the pasta pot to thin it down.
