Today, I defeated Uncle Roger at his game and made fried rice that even he would love to try. This recipe is from my friend Yubo, my classmate in culinary school in term 1. Even though I didn't have access to all the ingredients that are used in China, I made it work with what I had, so you guys can also easily make it at home. This will also be the last video I filmed at home and from now on all the videos will be from a different kitchen.

-Recipe:

Ingredients(for 2-3 people):

-200gr basmati rice
-40gr mushroom
-40gr white asparagus (optional, can use normal asparagus)
-40gr ham (5J) (any pork ham works)
-40gr green beans
-40gr shrimp
-20gr shrimp roe (optional, can use 40gr carrots instead)
-40gr chicken breast
-40gr scallop (optional, add some MSG instead)
-40gr sea cucumbers (optional)
-250ml-500ml chicken stock
-4 whole eggs
-1 leek
-60ml oil
-salt & pepper TT (to taste)

Chicken Stock (recipe for 2l):
-350gr chicken bones & meat
-3 carrots
-1 big white or yellow onion
-1 whole celery
-1 big tomato (optional)
-1 red bell pepper (optional)
-20gr ginger (optional)

Steps:

1. Make the stock, by browning the chicken in a pot with oil, until there is some brown fond on the bottom of the pan, add veggies, mix 2-3min then add water, cook on high heat until it boils then set on low-medium heat and cook until reduced by 1/3.

2. Cut all of the veggies and meat with 0.5mm x 0.5 x 0.5 size.

3. Heat the soup pan, and pour a bit of oil to fry, first the leek whites, to get more flavor, then quickly add the mushrooms, asparagus, ham, chicken breast, and carrots. Cook for 3-4 mins, until the ingredients become soft.

3. Pour all of the chicken stock into the pan, and set on medium heat. When it boils, put in the scallop cubes, and cook 3min.

4. Set aside the pot and heat a frying pan, or wok with oil. First, mix the eggs, and pour them into the heated pan. DO NOT STIR RIGHT NOW, immediately pour the rice into the pan to cover the egg liquid. Stir up and down with a spatula, so that the eggs quickly adhere to each grain of rice and turn golden brown.

5. Increase the heat, pour in some chicken soup with a spoon, and use the heat of the pot to quickly evaporate the chicken soup, and let the aroma cover the rice. Quickly toss the rice to evaporate all the soup. Then turn the heat to medium and pour the ingredients that we set aside into your frying pan. Continue to stir-fry as long as possible until you can see every grain of rice bouncing in the pan rather than sticking together. Finally, pour in the shrimp cubes and green beans, continue to stir-fry until the shrimp and green beans are cooked, and finally sprinkle the remaining leek, and season with salt and black pepper.
