Batch cooking Everyday curry masala

Batch cooking lets you prepare meals ahead, saving you lots of time and money. You can make half cook freezer meals, marinated ready to go meat, one tray bakes or my most favorite thing is basic masala frozen portions for hassle free cooking on weekdays. This is the base for many dishes. You can pretty much add lentil, meat or vegetables to this masala and make curry. This onion tomato masala is very versatile and freezes well.

Ingredients
3-4 Tbsp clarified butter
2 cups fried onion
4 Tbsp ginger garlic paste
4 Green Chili Pepper
12-14 Tomatoes medium chopped
2 capsicums
2 tbsp chili powder
2 tbsp coriander powder
Salt according to taste
2 Tbsp curry powder
1 tbsp cumin powder
Method:

Start the instant pot in Saute(more) setting and let it heat until it displays HOT.
Add oil, then garlic ginger paste and cook until fragrant.
Add chopped tomatoes, green chili pepper, capsicum and mix well. Saute for 5 mins, while stirring frequently.
When the tomatoes are soft add the spices.
Mix and pressure cook for 5 minutes at high pressure.
After add 1 small can of thick tomato paste.
blend using hand blender.

This recipe makes about 10 cups of curry sauce.
Once cool down add in ziplock bags and freeze.
Now you can have 15 days of easy and quick cooking.
