Waheed Fry Kabab Recipe | Karachi Burns road Street Food
Recipe
1 tsp coriander seeds
1½ tsp peppercorns
2 cloves
1 tsp cumin
Small piece nutmeg (Jaifil)
1 piece whole mace (Javitri)
3 green cardamoms
1 black cardamom
4 to 5 button chillies
1 cinnamon stick
2 pipli (optional but recommended)
1½ tsp kabab chini (optional but recommended)
1½ tbsp roasted chickpeas
Roast all the spices in a pan & then blend to make a spice mix
250 to 300 g beef mince
1 tsp salt
1 tsp red chilli powder
1 tsp turmeric powder
1/3 cup yogurt
1 tbsp heaped raw papaya paste or meat tenderizer powder
1 tsp ginger paste
1 tsp garlic paste
Prepared spice mix
Blend your beef mince in a chopper until it is very very fine
Mix with all the remaining ingredients & marinade for at least 3 to 4 hours or overnight.
1/2 cup ghee
1 small onion sliced
1 tbsp butter
Charcoal
• In a pan add your ghee & onions & fry till light golden
• Add in the marinaded beef mince & cook for 5 to 7 minutes
• Then add 1½ cup water. Cover and cook for 20 to 30 minutes on low flame till the beef is completely softened & the ghee comes to the top.
Add some butter & finish with charcoal smoke
• Garnish with ginger, coriander & onions. Serve hot with paratha or roti.
