Double Chocolate Chip Cookies
Ingredients
• 2 ¼ cups (313 g) all-purpose flour
• 1 ½ teaspoons baking powder
• 1 teaspoon baking soda
• 1 teaspoon cornstarch
• Pinch of salt
• 1 cup (225 g) unsalted butter, slightly softened
• ¾ cup (150 g) dark brown sugar
• ¼ cup (50 g) granulated sugar
• 2 cold eggs
• 1 teaspoon vanilla essence
• 1 ¼ cups (215 g) semi-sweet chocolate chips
• ¾ cup (180 g) dark chocolate chips

Instructions
1. Preheat oven to 350°F (180°C). Line a baking tray with parchment paper or a silicone mat.
2. Mix dry ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, cornstarch, and salt. Set aside.
3. Cream butter & sugars: In a large bowl, beat the butter, brown sugar, and granulated sugar until light and fluffy (about 2–3 minutes).
4. Add eggs & vanilla essence: Beat in the eggs one at a time, then mix in the vanilla essence.
5. Combine: Slowly add the dry ingredients into the wet mixture. Mix just until combined (don’t overmix).
6. Fold in chocolate: Stir in both semi-sweet and dark chocolate chips.
7. Scoop: Use a cookie scoop or tablespoon to drop dough balls (about 2–3 tbsp each) onto the baking tray, leaving space between cookies.
8. Bake: Bake for 10–12 minutes, or until edges are set but centers look slightly soft.
9. Cool: Let cookies rest on the tray for 5 minutes, then transfer to a wire rack.
