Starting the brisket off at 300-325 for two hours. With the mini slinger, you have the tuning plates that really does a good job protecting the bottom of whatever you are cooking. I decided to use that to my advantage and cook at a higher temp. I’m also using the Original Blacks BBQ brisket method. Where you cook your brisket for 6-8 hours. Then put into fridge for 24-48 hours. I will be doing the 24 hour method.
