We Built a Giant Oven to Smoke 600KG of Catfish, Chicken Chicken, Goat & More!

In this video, we take you behind the scenes to see how we locally fabricated a powerful smoking and drying oven used to process catfish, chicken, beef, goat meat, sea fish, and snails right here on our farm.

This custom-built oven is a true game changer — it comes with 18 racks (9 on each side) and can handle up to 600 kg of catfish at once. Designed with efficiency and quality in mind, the oven includes 4 fans installed on the doors (2 on each side) to ensure even heat and airflow, just like a conventional oven.

To keep the drying process safe and controlled, we added an outlet vent that helps release harmful gases and regulate internal temperature. The oven is equipped with three heating sources — firewood, charcoal, and gas — giving us full flexibility depending on what we’re drying or smoking.

Because of its massive size, moving it to the farm was quite the adventure! We had to bring in extra hands to unload it and even broke part of our fence to get it into the poultry section where it’s installed.

This innovation allows us to process large quantities of fish and meat efficiently while maintaining that rich, traditional smoked flavor Otto’s Farms is known for.
